Maybe a hot take, but I like the cleaner new UI except for the resource bars.
The old UI background airbrush style shadows look very amateur, not losing anything by changing that.
The resource bars, they had a specific Elder Scrolls like style to them, whereas the new resource bars look a bit generic and unpolished.

I don't like the change in UI in general, but the resource bars are something I specifically didn't like because yeah, the old ones are very clearly elder scrolls themed.
